Chipotle’s Chicken Burrito Bowl with Cilantro


Ingredients :
For the Chicken Marinate
4 Boneless, Skinless Chicken Breasts Halves
½ a Lime, juiced
¼ cup olive oil
1 packet taco spice mix
½ teaspoon tomato paste (optional)

For the Rice :
2 cups long grain rice
3.5 cups water
2 tablespoons butter
2 teaspoons salt
½ lime
bunch of cilantro

For the Burrito Salad :
¾ cup sliced bell peppers (any color combo)
½ cup diced tomatoes
½ cup diced onions
½ cup of canned corn
½ cup of canned black beans
1 cup chopped Romain lettuce
2 scallions chopped
small bunch of cilantro chopped
¼ cup sour cream

Ingredients :

  • 1 large apple (I used a Fuji- any apple will do, tart is better)
  • 1 can Pillsbury Crescent dough
  • 1/2 cup butter
  • 2/3 cups sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • 3/4 cup or 6 oz. 7-Up or equivalent (half the can)


Easy Pull Apart Pizza Bread


Ingredients :

  • 2 Cans of Pizza Dough or Biscuits
  • 2 cups Mozzarella cheese (or your favorite cheese)
  • 2 tablespoons of parsley flakes
  • ⅓ cup olive oil
  • 1 – 8 oz package of pepperoni (we used the turkey)

INGREDIENTS :
  • 1/2 cup sliced roasted red pepper
  • 1 3/4 cup Yoplait plain Greek yogurt
  • 1 teaspoon minced garlic
  • 1 teaspoon dried basil
  • salt and pepper
  • 1 cup plus 2 tablespoons hummus
  • 1 cup peeled and chopped cucumber
  • 2/3 cup pitted and chopped kalamata olives
  • 1 cup crumbled feta cheese

Banana Caramel Cream Dessert


Ingredients :

  • Vanilla Pastry Cream
  • Bananas (I used two bananas for 6 small dessert servings)
  • Good quality caramel sauce, or dulce de leche.
  • Fresh whipped cream (I used 3/4 cup heavy whipping cream and 1 Tablespoon powdered sugar)
  • Graham Cracker crumble

Recipe Sandwiches Chicken


Ingredients :
29 ounces canned tomato sauce
14.5 ounces canned petite diced tomatoes
12 ounces canned tomato paste
2 cups sweet yellow onion, finely diced
1 tablespoon garlic, finely chopped (about 2 cloves)
½ teaspoon dried parsley leaves
½ teaspoon dried oregano leaves
2 bay leaves
4 tablespoons fresh basil, finely chopped (about 6 leaves)
3-4 large THAWED/FRESH boneless, skinless chicken breasts
sliced or shredded mozzarella cheese
grated parmesan cheese
4-6 hard rolls

Chicken Recipe


Ingredients :
¼ cup butter
2 cups green bell pepper, sliced
2 cups sweet onion, sliced
3-4 chicken breasts, boneless/skinless
1 packet of dry fajita seasoning
⅓ cup salsa

Instructions :
Turn the slow cooker on low.
Add butter, then peppers, onion and chicken breasts.
Sprinkle seasoning over the chicken. Add salsa.
Cover and cook on low for 4-6 hours.
Use a fork to shred the chicken and serve.

Spicy Firecracker Shrimp


Ingredients :
12 frozen jumbo/large shrimp, defrosted
6 egg roll wrappers
Oil for frying
1 tbsp of flour with a little water
(make a paste of this to help seal the wrapping)
For the Marinade-
3 tbsp of Siracha or Hot Sauce
1 tbsp Soy Sauce
1/2 tbsp Rice Vinegar
1 tsp Seasame Oil
3 cloves of garlic
zest & juice of 1/2 a lime
1 tbsp of sugar
Salt and pepper to taste

Ingredients : 
1 lb. ground beef or turkey (20 oz. of turkey is fine)
2 tsp. chili powder
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. ground cumin 1 tsp. dried oregano
¾ tsp. kosher salt cayenne pepper to taste, optional
8 corn tortillas
1 c. refried beans
1 c. red salsa
1 c. green salsa (or use all one kind of salsa if you prefer)
3 c. Mexican blend shredded cheese
1 ripe avocado, sliced
1 small can sliced black olives
4 Roma tomatoes, diced
4 green onions, sliced thin
